What's for Dinner, Mon., June 2, 2025

I'm ordering in because I'm not supposed to stand or walk too much. Found out from my orthopedic that the gel in the knee is gone. Have a treatment program over the next couple weeks. Meanwhile, no gardening or cooking, the two things I love to do most.

We have this new business here called Wonder. It's all these different restaurants from all over the United States from which you can order. The neighbors have tried it and like it a lot, so I'm trying it tonight. The restaurant I chose is SriPraPhai, and I chose chicken satay and pineapple fried rice with shrimp. No delivery fee, they say. I think that's really odd.

Well, will see how it works.

Kombucha, plain.

Dessert: I have melon, blueberries, and mango from last night.

I'm having pan fried chx breast with onions, orange, red peppers & garlic, baked potato, & red leaf lettuce salad.

The thing that annoys me is that I won't be able to protest on the streets on June 14, however, I will do the car protest thing by making up signs for my car and supporting the other protesters. If I can find a place to park that's close, I can take my sign and a lawn chair.

Also, some sautéed spinach and grilled asparagus. Served with homemade tzatziki (with mint from our little patch.)

Sending a hug~

Just made veggie burgers with black beans, tomatoes, roasted corn, garlic, red peppers and spinach, Parmesan and oregano. Made a sauce out of Greek yogurt, sour cream, diced cucumbers, lemon juice, hot pepper relish and dill.

Lemon water

For later….strawberry smoothie made with almond milk, strawberries, strawberry yogurt, kale and wheat germ. Maybe a couple of cookies if I get lucky rooting around in the pantry.

I shattered mine in a slip & fall working as a commissioner for the Boy Scouts, of all things… Stepped in a hole in a dark, rainy grass parking lot and twisted, crushing my tibial plateau. They put me back together with graft from my hip and lots of metal plates and screws but now, 20 years later, I have zero cartilage and have been wearing a brace to keep the upper and lower halves of my knee walking the same direction. It’s past time for a knee replacement but I don’t know that I can afford the time off from work so I’m gimpy. It’s definitely screwed up my gardening (and anything that involves squatting, kneeling, or being able to get back up off the floor).

Long way to say I’m wincing in solidarity.

My dinner is going to be a reheated baked tattie (in my IP’s air fryer so it browns a bit) and sweet corn with some morel gravy to dress it up. This morning, I found I’d gotten strawberries but forgot about them so that’s my big dessert splurge.

Still need to get serious about making kombucha so I can only enjoy yours vicariously.

Steam-fried in evoo and veggie broth: chopped onion, red and green bell pepper, celery, sliced carrots and minced garlic. When soft I added canned fire roasted tomatoes, canned black beans, pintos, dark red kidney beans and cooked frozen corn. I added some tomato paste and more veggie broth. The spices I used were chili powder, cumin, oregano, chipotle powder, paprika, and cayenne pepper. Served with eggless corn bread. Cheers! 🥂
NJCher, sorry to read about your knee. My wife would go nuts if she couldn’t garden, so I know how you must feel. Hopefully staying off it and keeping up with the therapy will work and you’ll be as good as new.
