What's for Dinner, Sunday, June 8, 2025

I'm turning a portion of my big salad into a shrimp salad. I wrapped large shrimp in bacon and brushed them with sweet chile garlic sauce and grilled them.

They will top off the salad.

Since I had a lot of cucumbers, I also made sliced cucumbers in tarragon cream sauce.

Kombucha is apricot-peach.

Dessert is mini-ice cream cones covered with chocolate and nuts.

2. Not cooking tonight

We stopped at Costco yesterday, so dinner is on them.
Shrimp tempura with sweet chili sauce
Broccoli salad with cheese, raisins, and walnuts.

Lemon pepper Norwegian salmon, baked potato & salad with lettuce & tomatoes. Topped with Ital dressng. Garlic bread goes without saying.

6. Green bean soup

I needed bacon fat for the soup, but not bacon, so I had a 1/2 bacon avocado sandwich on fresh toasted bread too.
The green bean soup is potatoes, onion, seasonings and green beans. I cooked it all in some leftover chicken broth, added a little butter, bacon fat and cream cheese.
My best friend's Mom would make this soup in the late summer when the beans were coming in the garden. She added sour cream and crumbled bacon as a garnish.

7. I Did Shrimp Too

My take on a spicy Schezwan sauce.
Had lots of diced veggies. Red pepper, carrot, mushrooms, celery,
Herbs were tarragon & cilantro.
Warming spices, cayenne, white pepper, & a pinch of ground clove.
A little raw sugar & rice wine vinegar to offset the hot.
Everything cooked in the wok, the my liquids, (soy, vinegar, water, mirin...)
Shrimp went in last & I stirred until the shrimp were pink. Nailed that. Shrimp had perfect texture.
My wife gave it the thumbs up.

8. Tofu Asparagus Scramble

Steam fried in evoo and veggie broth: chopped onion, orange bell pepper, sliced carrots, sliced mushrooms and minced garlic. When done I added cut asparagus and when done I added the mashed firm tofu, Jax Tofu Scramble seasoning and Penzy’s Sunny Paris herbs. Cheers!🥂
