What's for Dinner, Mon., June 9, 2025

Eggplant slices, breaded. On the top, slices of mozzarella rolled with pancetta. Tomato sauce and parmesan over the top. Fresh basil.

This was one of the dishes we ordered when I was in Red Bank last week. The restaurant did a superb job; hope I can match it.

A little tossed salad on the side.

Kombucha: cherry.

Dessert: Might pick up something at Trader Joe's.

Tofu tikka masala, rice, decafe tea.

I used a commercially made simmer sauce but I did oven fry the tofu cubes before putting them in the sauce

Lentils cooked in veggie broth, tomato paste, minced onions and garlic. When the lentils were done I perfumed them fresh herbs from my garden: thyme and oregano. Served with air-fried sweet potatoes and steamed broccoli and mushrooms seasoned with Miyoko’s butter and Dijon mustard. Cheers!🥂

Or, as it's commonly called, "clean out the fridge night". Some beef stew, some Hungarian sausage with onions and peppers, a little bit of shrimp sautéed with mushrooms, and some rice. The only leftover left (spaghetti) is my lunch for tomorrow.

So now we have a lot of space in the fridge, and a full dishwasher.

Oh yeah, some berries later on.
