Ground beef (Impossible burger, crumbled) and Lentil Tacos. I found this recipe in Mostly Meatless, a new cookbook I obtained from the library. Onion, garlic, chili powder, coriander, tomatoes. Cheddar cheese on the tacos.
Tossed green salad.
Cherry kombucha.
Dessert: Cantaloupe with mint. Iced tea.

(1,331 posts)My filling will be TJs chorizo (basically heavily sauced and spiced TVP, I think) and refritos with tons of pickled jalapeños, lettuce, and Daiya cheese. For some reason, Id grabbed a box of taco shells and saw later they were bigger than I expected and flat on the bend so might be a useful design change.

(1,553 posts)that I made 2 days ago. Flavors have marinated and its even better than before. Toasted whole wheat Kaiser rolls to go along with the soup. My wife bought an apple pie at the Farmers Market so well have pie for dessert. Cheers!🥂

(52,988 posts)Essentially a stir-fry with Vidalia onion, zucchini, grey squash, orange peppers, and poblano peppers with a combination of garlic powder, cumin, paprika, salt, pepper, and chili powder. And when almost done, juice from half a lime. And sprinkle crumbled Cotijo cheese over it when ready to serve.
I *was* going to have it as a side dish with my frijoles rancheros, but even a side dish of the vegetables was more than enough for me.

Get it real hot before putting it in the pan. Then turn heat down.

(1,831 posts)Basically you make a curry sauce with coconut milk, curry paste and other seasonings. Mix that with chopped baby bok choy, lay chicken or pork oriental dumplings on top, cover with foil and bake. Turned out pretty good, will probably do again.
We also had sweet corn from the farmers market, because it's in season and the season doesn't last forever. An Italian Pinot Grigio (inexpensive from Trader Joe's, not fancy) to drink.

Every spoonful I take receives a longing gaze from Ducky, but he's staying quiet and waiting, certain I'll give him some when I'm done.

(39,412 posts)It was one of those pre-marinaded ones you get from the store (which I like very much).
It was a BBQ marinaded pork tenderloin. We had baked potato and sauteed zucchini on the side.
The last of the birthday pie (with a scoop of vanilla ice cream) for dessert.
