What's for Dinner, Mon., Oct. 20, 2025

I found this recipe called "Cabbage Rolls without the Work." I had thought about a recipe like that before, but never got around to experimenting with it.

It's cabbage and ground beef--I'll probably use Beyond burger--plus the usual ingredients like garlic, tomato paste, celery, onion, crushed tomatoes, Worcestershire, etc. The idea, of course, is that you skip the stuffing of the ingredients in the cabbage leaves and put the cabbage directly into the mixture and serve it over rice.

Sounds like a winner to me!

Also I'm making a tossed green salad with spring mix and baby arugula.

Kombucha: cherry-apple cider flavor.

Dessert: Chocolate covered biscuit and hot Earl Grey.

Air fried Aldi’s Teriyaki Salmon Burgers and had them on multigrain bread with sliced red onion and teriyaki sauce. Also made braised cabbage with mushrooms and onions. Cheers!🥂
