What's for Dinner, Tues., Oct. 21, 2025

Barbecue burger using Beyond and South Carolina style BBQ sauce.

Coleslaw which I made using a mayo-based dressing.

Cherry-cider kombucha.

Hope to bake something for dessert tonight, like a seasonal type cake.

The salad is leftover from last night. The bao were in the freezer.

It might be a sad meal of desperation, but I will enjoy it.

6. I saw a honeynut squash at the store tonight

First time I've ever seen one. These were kind of small, and were a tan color. I think they looked a bit like the shape of the acorn squash?

Steam-fried in evoo and veggie broth: chopped onion, red bell pepper, cut green beans and minced garlic. When almost done I added sliced mushrooms, air-fried crispy tofu, red pepper flakes and a dollop of Miyoko’s butter. When finished I added some cooked brown rice and chopped fresh parsley. Cheers! 🥂
