I've watched Tony Bourdain since 2000 and I love his adventures into unusual foods and recipes for Americans. He has eaten goat in a few locations, usually a stew or curry. I found a place near me that has fresh goat meat available and I wondered what others have had success with in their own kitchens.

(54,156 posts)I did a little research and it turns out that goat meat is quite lean. That surprised me since it seems so flavorful, at least from the 2 Tony Bourdain episodes which feature it. Usually meat that is flavorful has a high fat content. 4 ounces has only 125 calories (equal to chicken) and not like beef at all.
That seems like a win-win. Flavor and lean.
And it isn't expensive. There is a place in San Diego that sells goat meat for $4 a pound or less.
I'm debating trying lamb or goat at a local produce place I saw today when I looked on-line since both are the same price. I think I'm going to experiment and the try goat recipes since I like experimenting with new products.
The suggestions that you provided showed so many various ways to enjoy goat meat. I think I may become a fan of goat meat if this goes well.

I love goat so much that I made a barter with a law client to give me goat meat in lieu of payment.

Meatballs:
Goat-balls and Spaghetti
Makes 3-4 Servings
Cooking + Prep Time: 3 hours 15 minutes including
marinating and searing time.
Ingredients List:
* 1 bunch of parsley
* 3 oz. of breadcrumbs
* 2 lbs. of goat meat, ground
* 1 onion, medium
* 1 tbsp. of fennel, grated
* 2 ounces of cheese
* 20oz. of gelatin
* 4 ouncesof ground sausage
* 3 eggyolks, medium.
* 1 jar marinara sauce
* 2 tsp. of oregano
* 2 garlic cloves
* 2 ouncesof goat milk
* 1 tsp. of cumin, ground
* 1/2 cup of pasta noodles
* 1 cup of veggie stock
* salt and pepper for seasoning
Method:
Step 1 Season the ground goat meat using salt and Pepper.
Step 2 Grind the oregano, fennel, and cumin with the breadcrumbs.
Step3 Transfer the mixture to a mixing bow1, metal.
Step4 Add goat milk. Stir to combine.
Step5 Slice garlic and parsley thinly. Add them to the breadcrumbs.
Step6 Add ground sausage, egg yolks and 1/2 of cheese to ground meat.
Step7 Allow the mixture to sit, to absorb all the flavors. Roll mixture into balls.
Step8 Sear the goat balls in a skillet.
Step9 Add marinara sauce and veggie stock.
Step 10 Simmer for about 45 minutes. Meat should be thoroughly cooked.
Step 11 Boil noodles for about seven minutes.
Step 12 Toss them in sauce.
Step 13 Plate with the meat balls.
