What's for dinner Thursday 11/6

Caribbean Chicken Stew with Black Beans & Rice

a staple of Caribbean cuisine — a rich stew of boneless chicken thighs and potatoes infused with dark brown sugar, coconut milk, and plenty of aromatics. A side of basmati rice with black beans completes this comforting classic.

in a sealed bag. You cook it in the oven for 2 hours and 30 minutes, then it has to rest for 10 minutes. Cooking time almost up. It smells delicious. It's good for a somewhat cold night. It has a slow cooker option but that took 4 hours.

It's very crowded out and around NJ tonight.

I'm having broccoli rabe, cheese-basil sausage, mozzarella, and rigatoni with olive oil, garlic, and freshly ground black pepper.

leftovers tonight. Barbecue spareribs, green beans, and fried potatoes.

Salad or watermelon later.

Leftover portion of homemade lasagna. Has roasted veggies. Plant based burger meat plus chorizo.
Warmed in oven or microwave.
Sprinkle of parmesan cheese.
Possible small salad.

that I make in a 9x9in. glass baking dish. Canned salmon, bread crumbs, rolled oats, minced onion, celery, red bell pepper, garlic, flax egg, chopped parsley, sweet peas, hot sauce, Worcestershire sauce and lemon juice mixed together and baked for 1 hr at 360 degrees. Also made sweet potato hash and steamed asparagus and mushrooms for sides. Cheers!🥂

Son insisted on making a dinner that grew out of control—mashed tatties and two kinds of gravy (he knew I wouldn’t eat the actual chicken gravy), mixed veg, Gardein turk’y cutlets for me, and a ridiculously giant cast iron skillet with some kind of sausage and stuffing (from a box). I figured it was fine because I didn’t have to lift a finger and I’d only had a PB sandwich and a granola bar for lunch.

As I’m chuckling over his over-the-top efforts, a part of me is kind of sad there’s no pumpkin pie… This weekend may include pie day, or at least pumpkin muffins.
