Eggplant-almond enchiladas using a spinach wrapper. This is a Mollie Katzen recipe which also calls for pepper jack cheese.
I also have baby spinach leaves and ruffly green lettuce washed, so if I decide to have a salad, too, it will be easy.
Cherry kombucha.
Dessert: a few Chessman cookies and hot tea.
Been working like a nut all day preparing for this storm: sawing down 60-tall bamboo that might fall on the power lines, buying supplies like firewood, and all the stuff it takes to light a fire. I haven't done it in years, so I might start a test fire in the fireplace tonight or tomorrow. Storms are a lot of work, and the snow isn't even here yet!

I did not know that but I was going to look for a youtube video before I did this.

(1,792 posts)Made them from frozen in the air fryer and they came out fantastic. Served on whole wheat Kaiser rolls with the usual fixings. Also made steamed asparagus with mushrooms as a side. Cheers!
Hey Cher. Living in the fetch of Lake Erie is ground zero for huge lake effect snowfalls. This general storm thats rolling across the country is supposed to dump up to 12.-18 inches of snow on NJ but we are only predicted to get 9-12. Good luck with the fireplace; I wish we had one. Hope it doesnt get too bad for you. Your soup sounds terrific!

(1,701 posts)I fiddle farted around and finally around 10:30, opted for TJs strawberry pop tarts (way less sugar than the originals) and a big mug of dark cocoa.
I vow to make an actual effort tomorrow, seeing as how its Saturday. Hopefully.
