What's for Dinner, Sat., Jan. 24, 2026

Spicy Indian Couscous with Crispy Tofu and Toasted Cashews.

I'm using Maya Kaimal Madras Curry sauce; an Indian simmer sauce with peppery coconut and coriander.

Pineapple kombucha.

Dessert: Greek honey vanilla yogurt with cherries. Hot chocolate.

Leftover homemade black bean and sausage soup with lots of tomatoes
Side of leftover slaw
Lemon water
Teeny, tiny sliver of lemon cake…..okay….slab.

Got this recipe years ago from the mother of friend. It's exceptionally satisfying on a cold, snowy winter day. (presently 4 degrees and snowing since I got up this morning)

Cook a 3-4 lb. chicken in a big pot with coarsely chopped carrots, celery, onions, and some whole black peppercorns. When chicken is done drain and save stock and pick the chicken. Put chicken back in pot with stock. Put on the stove on lowest heat, cover, and let be.

Sauté 3-4 finely diced carrots, a diced rib of celery, 3-4 minced garlic cloves in 2 tablespoons butter until soft. Then add to the chicken and stock.

Either use 2 jars of your favorite marinara sauce or use 2 28oz cans of crushed tomatoes and make your own sauce. Add marinara sauce to the chicken pot.

Grate @3/4 cup of parmesan and add to the pot.

Add 1 cup of uncooked white or brown rice to the pot and simmer until the rice is cooked.

Top with additional parmesan and enjoy.

We may all be stuck at home for the next few days, so I took a 3-lb. boneless turkey breast out of the freezer and I'm cooking it in my crockpot on a bed of onions, sweet potato, little white turnips, and daikon. Added broth and will make gravy. Enough for the next few days but will probably freeze some for later. Strawberries for dessert.

corn, and baked sweet potato that we grew in our garden last summer.

Snowing pretty heavy now. We got out of the casino when the snow started. I lost $2.95, and Loretta won $3.00. So together we won 5 cents, and got out of the house for four hours.

Went out and got falafels from our local Middle Eastern restaurant. We like this place because their falafel balls are spiced the way we like them (with cumin and parsley) and they use tahini instead of the yogurt and garlic based sauces that most of the other local Middle Eastern restaurants use on their wraps. Seems that the Yemeni owned restaurants use the yogurt sauce while the Lebanese and Israeli owned restaurants use tahini. For me a falafel must have tahini or it’s not the real thing. Cheers!🥂
