What's for Dinner, Thurs., April 30, 2026

I'm testing all the chickpea pastas on the marketplace, and today I tested Banta's macaroni and cheese. Very good! I shortened the cooking instructions by a few minutes because if I hadn't, the chickpea pasta might stick together. (I learned that from previous efforts.)

To go with the mac 'n cheese, tomato and red onions in olive oil vinaigrette.

Hamburger on cheese-jalapeno roll. Provolone cheese on the patty.

Potato sticks, the herb kind. Get these at Aldi during German Week.

Kombucha: Plum ginger.

Dessert: Strawberries and vanilla ice cream.

Pork chops, mashed potatoes, cream of mushroom gravy, and green beans.

Popcorn later.

Good Evening

Loretta says, tell Cher she lost 5 squash plants. She thinks she over watered them when she moved them. It got down to the high 30's this morning, so it wasn't frost. Frost is in the forecast for Saturday, and Sunday.

Friend just offered to go get a wood fire pizza from a local Mom and Pop place. Barbecue chicken with a side Greek salad.

These are times to cherish small, wonderful acts of kindness.

Air-fried frozen breaded pollock portions on whole grain bread with a sauce I made of vegan mayo, ketchup and sweet pickle relish. Also made oven roasted seasoned cauliflower and whole wheat couscous with peas. Cheers!🥂

… and keep forgetting to try it. Glad for the heads-up about the sticking. I do like the idea of a pasta that’s more protein than starch.

For my dinner, it’s Irish stew redux. My IP malfunctioned last night and the.tatties never got soft… Couldn’t get it to go back to pressure cooking so just waited it out on slow cooker mode until today, and hooray—everything’s melt-in-your-mouth ready and the broth is intensely good. Heathen that I am, will dunk a PB sandwich in it to sop up every last drop.
