What's for Dinner, Fri., May 1, 2026

Salmon and shrimp salad over greens, which include baby spinach, red tip, and romaine.

Mixed into the salmon/shrimp will be scallions, complete with their greens, and a little red onion for color. Cucumber, diced, and fresh celery leaves, straight from the garden. Hard boiled eggs and mayonnaise. Toasted sesame seeds over the top.

Munchies on the side will be seasoned, toasted rye bread thins, wheat crackers with red pepper feta spread, black and green olives, and pickled banana pepper rings.

Kombucha: Strawberry guava.

Decaf and almond biscotti for dessert, if I get that far. I usually fall asleep before dessert!

So I heated up some hot wings in the air fryer and sliced up a cucumber and an apple. It’s boring, but it works.

... the baked kind, with mushrooms, celery, and tomatoes.
I can't remember the last time I made this - used to make it every week or so when my kids were little.

Air-fried the sausages. Also made red potato salad from potatoes I boiled last night and kept in the refrigerator overnight to lighten the glycemic index. Also made steamed cabbage and mushrooms with Dijon mustard sauce. Cheers!🥂
