What's for Dinner, Mon., May 18, 2026

Posting early due to working late.

Crab cakes with lemon pesto/mayo sauce, sprinkled with fresh chives (and some have chive flowers!)

Macaroni and cheese.

Kombucha: Pineapple.

Strawberries for dessert, sweetened with agave and ginger crystals.

4. Ravioli lasagna with pepperoni

I cooked the ravioli, and doctored up jarred sauce with fresh mushrooms, onion, garlic, and jalapeno peppers. I mixed an egg with ricotta cheese and grated a block of Mozzarella, I had everything on hand except the ricotta and I got that the last trip to the grocery.

It turned out very tasty. Of course, I have a sink full of dishes, but totally worth it.

I got some coconut macaroons while I was out.

Steam-fried in evoo and veggie broth: chopped onion, celery, green bell pepper, sliced carrots, and minced garlic. When done I added canned petite tomatoes, tomato paste, black beans, more broth and spices of chili powder, cumin, oregano, chipotle powder, and red pepper flakes. When done I added air-fried red potato nuggets and have it a good stir. Dish topped with fresh avocado slices after plating. Salud!🍻

… and spiced pumpkin seeds for dessert. The latter is like pumpkin pie in a nutty snack, only available at TJ’s for about a month in the fall, and I’m mortified to see that I have only two bags left. But man, are they good.

I think I said I was going to make chili for Sunday dinner (and beyond) but my son beat me to it and as he’s an unrepentant omnivore, I can barely look at it… Full of some kind of meat and other things I can’t stand. He gets points for self sufficiency but negative points for failing to consider there are two of us wanting to eat. (He’s usually the one to jump into dinner prep so I’ll give him grace this time, I guess.) Best to let my stomach settle before I make my own batch. It’s been a while since I’ve had udon and my tummy’s happy enough.
