What's for Dinner, Fri., June 19, 2026

I've been wanting to make this Filipino eggplant recipe for a long time, and I bought the ingredients to make it tonight. It's called Tortang Talong. It's kind of like a stuffed eggplant wrapped in an omelette. Greatly oversimplified, but those are the basics. The stuffing will be Beyond sausage, although the recipe says you can use anything from shrimp to ground pork. Some of the other stuffing ingredients are oyster, fish, and soy sauce.

I'm growing a lot of eggplant this summer, so my plan is to test out new recipes in advance.

Mango kombucha and small green salad to go with it.

Coffee HD for dessert.

~ Regular old diner-style toasted tuna roll with iceberg lettuce

~ Side of sliced tomatoes with maple balsamic dressing

~ Couple chunks of Vermont’s Cabot cheddar cheese

~ Lemon water

~ Lemon cookies….I’ll try to have just two.

Couldn't get to the market so made a seitan (turkey) roast. Not sure how I'll use it but my main objective was to have cold cuts for sandwiches. Might have it as a grilled PB & turkey sandwich tonight, and I have a honeydew I need to use up before it gets too old and becomes bird treats (I have four parrots, who will get some regardless). 😋

It's big enough I should get a proper turkey dinner out of it plus a week of sandwiches.

Steam-fried in evoo and veggie broth: chopped onion, red bell pepper, cut broccoli florets, sliced mushrooms, dried oregano, basil, red pepper flakes and minced garlic. When done I added kidney beans, cooked organic quinoa and fresh chopped parsley. Vegan parm on top after plating. Cheers!🥂
