7. Aloo Gobi with Chickpeas

I air-fried potato cubes ahead of time. Steam-fried in avocado oil and veggie broth: chopped onion, chopped red bell pepper, cauliflower florets, sliced mushrooms, minced ginger and garlic. When done I added cooked green peas and cooked chickpeas. I made a sauce from 3 Tbsps of Patak’s curry paste and a half cup of veggie broth and poured it over the veggies. Finally, I added the fried potatoes and tossed it all together. After plating I topped off the dish with chopped scallions. Cheers!🥂
