I came up with an interesting way to have corn on the cob with the most delicious topping (not butter).

I'm having this tonight and also tarragon-lemon chicken. The chicken is in one of those carved out hard rolls (boule', small).

The corn is cooked in the microwave for 4" in the husk. It is wrapped in a damp paper towel. Upon removing it from the microwave (with a hotpad), cut the end off and slide out the ear of corn. So simple; then throw the cob and husk in the composting.

This is the topping:
Cojita or feta cheese
Mayo
Lime
Hot sauce
Red pepper flakes
Any herbs like cilantro or elote

Mix and put a small amount on each bite from the ear of corn.

Kombucha: blueberry basil

Dessert: vanilla ice cream topped with organic, no-salt cashews.
