Coconut Shrimp with Pineapple Chili Sauce.

I love coconut shrimp and have made it the same way for years, but tonight I think I'll make it with pineapple chili sauce. This sauce has Thai sweet chili sauce, ginger, garlic, soy and a little brown sugar combined in pineapple juice.

I found this recipe in the You Got This cookbook by Diane Morrisey. Diane used to be an executive with Whole Foods in the NY/NJ/CT area and supervised the prepared foods part of the business. I think that includes the buffet, where I often get inspiration. I like to make my own versions, though, using freshly picked produce from my garden.

For a salad, chopped green ruffly and red tip with tomatoes, green pepper, and red onion. Cucumber, too.

Mixed up a gallon of kombucha this morning.

Dessert: I picked up a carrot cake and much to my surprise: NO WALNUTS. Huh? So I will toast walnuts and sprinkle them over the top with a little vanilla ice cream if I want dessert, which is debatable at the moment. It's really too hot here to have much of an appetite.
