…was a working mom. In the interest of efficiency and decreasing morning chaos, we would make 5 days’ worth of sandwiches every Sunday evening and freeze them. Pop one in the lunchbox in the morning and they would thaw by lunch time.

Egg salad on white bread does NOT freeze or thaw well - makes a big soggy mess. To this day, I cannot eat an egg salad sandwich.

Deviled eggs are just fine - love ‘em.
